- 50 gSHEKO Vanilla Powder
- 80 gwholemeal spelt flour
- 1 tsp baking powder
- 2 tbspXylitol (alternatively coconut blossom sugar or raw cane sugar)
- 50 gCoconut oil (liquid)
- 3 eggs (size M)
- 1 tspvanilla extract
- 125 mlMilk (1.5% fat)
- 100 gBlueberries
- 25 gchopped almonds

Preheat oven (top/bottom heat: 180 °C / fan oven: 160 °C ). In a bowl, mix flour, SHEKO vanilla powder , baking powder and sugar.

Warm the coconut oil and add it to the bowl along with the eggs and vanilla extract . Gradually add the milk while stirring, until you have a smooth, thick batter .

Wash and pat dry the blueberries . Then fold them into the batter. Divide the batter evenly among a 6-cup muffin tin and sprinkle with chopped almonds . Bake the protein muffins on the middle rack of the oven for about 30 minutes .
