Ingredients
- 2 tbspolive oil
- ½ onion, diced
- 1garlic cloves, finely chopped
- 150 gBrussels sprouts, finely sliced or shredded
- 1/2zucchini, grated
- 1 tspcumin
- ¼ tsppepper
- 2 handfulsbaby spinach
- 3 eggs
- ¼ cupfresh cilantro, chopped
- SomethingChili

- 1/2 avocado, sliced
- Optional 100g Feta Light

Sauté onions and garlic in olive oil. Add Brussels sprouts and grated zucchini , season with cumin, salt and pepper , and fry for 5–7 minutes.

Stir in the spinach and let it wilt.

Make small indentations in the vegetable mixture and crack the eggs into them. Cover the pan and let the eggs set over low heat. Serve with fresh cilantro, avocado, and a little chili.
This also works with other seasonal vegetables, depending on the time of year. Feta cheese is a great topping. Ideally, use 100g of light feta.
