Ingredients
- 250 gshort pasta (e.g. fusilli, penne or farfalle)
- 200gFrozen peas, thawed
- 1 cancorn (approx. 285 g drained weight)
- 1/2cucumber, diced
- 2Bell peppers (red & yellow), diced
- 1red onion, finely diced
- 2 hardboiled eggs, diced
- 200 gdiced ham/chicken breast
For the dressing
- 200g Light Cream Cheese
- 5 tbsp milk
- 5 tbsp apple cider vinegar
- A little salt, pepper, sweet paprika, sugar
- A little Mixed fresh herbs (chives, dill, parsley), finely chopped

Cook the pasta according to the package instructions in salted water until al dente, drain and let cool.

Cut the bell pepper, cucumber, and ham into small cubes . Finely dice the red onion. Hard-boil the eggs, cool them in cold water, peel them, and dice them as well.

In a bowl, combine the light cream cheese with milk and apple cider vinegar. Season with salt, pepper, sweet paprika, and a pinch of sugar. Stir in the finely chopped fresh herbs.

Place the cooled pasta, vegetables, peas, corn, ham, and diced eggs in a large bowl . Pour the dressing over everything and mix well.

Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to develop. Taste and adjust the seasoning before serving.
