preparation

  • 1

Cut three bananas into small pieces and place them in a mixing bowl. Add oat flour , milk , SHEKO vanilla powder , baking powder , salt , oil , and one egg . Mix with a hand mixer until you have a slightly runny batter. If the batter is too thick, simply add a little more milk .

  • 2

Meanwhile, preheat the oven to 200°C (390°F). Pour the batter into a loaf pan lined with parchment paper. Halve a banana lengthwise and place it on top of the batter. Roughly chop the pecans and sprinkle them over the banana.

  • 3

Bake in the oven for about 50 minutes. After 40 minutes, do a first test with a skewer: simply insert a wooden skewer or toothpick into the banana protein bread – if no liquid batter sticks to the skewer, the treat is ready.

No oat flour on hand.
You can also simply use rolled oats and grind them finely with a stand mixer, a food processor, or even a hand blender (be careful, it's dusty!).
