- 4ripe peaches
- 1 tbspcoconut oil
- 200gGreek yogurt (0% fat)
- 50 mlButtermilk
- 1 tspvanilla pudding powder
- ½ tsplemon zest
- 1 tbsphoney (plus some for drizzling)
- 50 gWalnuts, roughly chopped
- A few leaves of fresh mint, finely chopped

Halve the peaches and remove the pits. Brush the cut surfaces with coconut oil.

Preheat a grill pan or grill to medium heat. Grill the peach halves cut-side down for about 3–4 minutes , until they have golden-brown grill marks. Then turn them over and warm for 1–2 minutes on the other side.

In a bowl, mix the Greek yogurt with buttermilk, vanilla pudding powder, lemon zest, and 1 tablespoon of honey. Stir well until a creamy consistency is achieved.

Toast the chopped walnuts in a dry pan without oil for 2-3 minutes until fragrant. Then let them cool slightly.

Arrange the grilled peaches on plates. Top each with a dollop of the honey-yogurt cream. Sprinkle with the toasted walnuts, drizzle with a little honey, and garnish with chopped mint.
