- 2 mediumsized carrots
- 2 apples
- 1Handful of fresh herbs (e.g. parsley, mint or coriander, finely chopped)
- 30 gkernels or nuts (e.g. walnuts, sunflower seeds, pumpkin seeds, roasted)
- Optional150g cottage cheese (4% fat)
For the dressing
- 1 tbsp rapeseed oil
- 3 tbsp freshly squeezed lemon juice
- 4 tbsp apple juice
- ½ tsp salt
- A little pepper to taste

Cut the carrots lengthwise into thin strips using a vegetable peeler. Wash the apples , quarter them, remove the cores, and cut them into thin strips or sticks.

Mix rapeseed oil, lemon juice and apple juice in a bowl . Season with salt and pepper.

Mix the carrot and apple strips with the dressing . Stir in chopped herbs and roasted seeds or nuts. Add cottage cheese if desired.

Mix everything well and enjoy immediately or let it steep briefly.
Add a handful of roasted pumpkin seeds or hemp seeds.
Top with pomegranate seeds or toasted almond flakes.
