Protein French toast with strawberry sauce

Whisk together eggs , oat milk and SHEKO vanilla powder in a bowl until smooth. Dip the toast slices in the mixture one at a time.

Heat coconut oil in a pan and fry slices of toast until golden brown on both sides.

For the strawberry sauce:
Wash the strawberries and remove the stems. Puree the strawberries with maple syrup and lemon juice until smooth. Serve the French toast with the strawberry sauce and chopped pistachios .
