preparation
-

Beat the egg whites until stiff peaks form, then set aside 1/3 of the meringue along with 80g of the icing sugar for the glaze. Gently fold the remaining meringue into the remaining ingredients and knead the dough into a firm mass. Chill the dough for approximately 30 minutes.
-

Sprinkle a clean surface with flour and roll out the dough on it. Then cut out stars using a cookie cutter and place them on a baking sheet lined with parchment paper, leaving some space between them.
-

For the glaze, mix the remaining egg white and the icing sugar into a smooth mixture and decorate the cinnamon stars with it.
-

Bake at 175 degrees Celsius (350 degrees Fahrenheit) using conventional oven settings (top and bottom heat) for approximately 15 minutes. Every oven is different, so keep a close eye on your cinnamon stars. For the perfect texture , the tops should remain white and they can still be slightly soft after baking. Enjoy!
