- 120 gbutter, softened
- 4 eggs
- ½ tspsalt
- 200 gSpelt flour
- 2 tsp baking powder
- 50 mlMineral water (carbonated)
- 100gBaby spinach, finely sliced
- 100gGouda, grated (or a lower-fat alternative for less fat)
- 1 pinch of salt
- 1 pinchnutmeg
As a topping
- 8 tsp Greek yogurt (10% fat)
- 200g smoked salmon
- 2 tbsp fresh dill, chopped
- 1 pinch black pepper

Thoroughly mix butter, eggs, salt, flour, and baking powder in a bowl . Only add the mineral water at the very end and stir it in.

Add baby spinach and grated Gouda cheese to the batter. Season with a pinch of salt and nutmeg.

Lightly grease the waffle iron and heat it up. Pour approximately 2 tablespoons of batter into the iron for each waffle and bake until golden brown .

Top the waffles with Greek yogurt, salmon, and dill . Sprinkle with black pepper and serve immediately.
Stir a spoonful of cottage cheese or skyr into the yogurt.
Replace the salmon with avocado or egg.
