Vegetarian chickpea stew

Simply dice your favorite vegetables , sauté briefly, and let them simmer. Finely chop onions, garlic , and chili, and sauté them in a pot with a little oil .

Add the red lentils , water, tomatoes , coconut milk and spices and simmer for about 15-20 minutes over medium heat.

Add the chickpeas and spinach and stir well. Let the stew simmer for another 10-15 minutes . Serve with fresh parsley or coriander and a dollop of coconut yogurt .
