    Split the vanilla pod lengthwise and scrape out the seeds. Carefully mix with the coconut milk, yogurt, and SHEKO coconut powder .

    Pour the ice cream mixture into popsicle molds; it should be enough for 8 popsicles . Freeze for 15 minutes , then insert a wooden stick into each one.

    Freeze for four hours or overnight.

    Take the popsicles out of the freezer and enjoy them in the sun.

The secret is coconut milk.
Coconut milk does contain many fatty acids, but primarily medium-chain fatty acids, which provide the body with quick energy. We therefore use the fat rather than storing it. Thanks to its high fat content, coconut milk is also responsible for the creaminess of popsicles. Coconut milk is a better alternative to cream (which is usually used in ice cream).
