Rinse the quinoa in a sieve under cold running water. Then cook according to the package instructions in boiling salted water and let cool.

Peel the sweet potato and cut it into small cubes. Cook the sweet potato in boiling salted water for 10–12 minutes.

Meanwhile, wash the kale, shake it dry, and remove the leaves from the stems. Rinse the chickpeas thoroughly and drain them.

For the vinaigrette, combine olive oil and lemon juice and season with salt and pepper. Toss the quinoa, sweet potatoes, kale, and chickpeas in a bowl with the vinaigrette. Serve the quinoa salad with feta and cranberries.
